OPENINGABOTTLEOFWINE PRESENTATION-STILLANDSPARKLINGWINE The bottle of wine should be presented to the guest within 5 minutes of ordering, and should always be presented to the guest who placed the order. When presenting the wine, you must read the following information aloud: 1.Vintage – Example:2009 2.Maker – Example: Sonoma Cutrer OR Louis Latour 3.Grape or Region – Example: Chardonnay OR Chablis 1er Cru 4. Name” or Vineyard Site (if applicable) – Example: Russian River Ranches OR Mountains
Examples: 2009 Sonoma Cutrer Chardonnay, Russian River Ranches 2009 Louis Latour Chablis 1er Cru, Montmains It is preferable to read this information in the exact order listed above, but this can vary based on your outlet or by the preference of your Beverage Manager. Regardless of the order in which you read this information, it is important that ALL of the information listed above be read aloud to the guest when presenting the wine. OPENINGTHEBOTTLE – STILLWINE
Tools needed: Corkscrew, Serviette Napkin, Wine Bucket or Coaster
Throughout this process, the wine label should always be facing the guest. 1.Place your hand around the neck of bottle, just slightly above the bottom of the foil, by placing your thumb and pointer finger together and grasping the bottle
2.Using the knife on your corkscrew, cut the foil under the top lip of the bottle. Make sure you cut below the lip, not above – this ensures the wine will not touch any foil while pouring. Only turn your hand and wrist as needed, and do not turn the bottle. Start at the point closest to you (on the left side) and move the knife of the corkscrew around the lip in the clockwise direction (towards the right side). After completing the cut in a full circle, use the knife to pull the top piece of the foil off of the bottle. 3.Insert the corkscrew as close to the center of the cork as possible and turn the corkscrew clockwise until the spiral metal piece is almost completely in the cork 4.Using your thumb to hold the lever in place, lift the corkscrew until the cork is approx. 90% out of the bottle neck. Grasp the partially removed cork with your free hand and slowly wiggle the cork back and forth until it has been completely removed from the bottle neck. There should be no “popping” noise made when the cork is fully removed 5.Once the cork is fully removed from the bottle, remove the cork from the spiral metal piece of the corkscrew by turning the cork counter clockwise OR by grasping the cork and turning the corkscrew counter clockwise 6.Place the cork in front of the guest to whom you presented the wine on their right-hand side, above where the knife is placed on the table setting
