7.Pour the guest an approx. 1ounce taste of wine from the bottle, using a serviette napkin to wipe any excess wine from the lip of the bottle 8.Upon approval, pour approx. 3 ounces of wine for each of the remaining guests in the following order (ideally in a clockwise direction around the table): »Women (oldest to youngest) »Men (oldest to youngest) »Member who ordered the bottle of wine (regardless of age or whether they are a man or woman, the guest who ordered the bottle should always be served last) 9. After the wine has been poured for all of the guests » For red wine: Place the wine on the table with the label facing away from the guest who ordered the wine so that the label is facing the rest of the guests at the table »For white wine: ask the guest whether they would like their wine left on the table or if they would like it chilled. If left on the table, use the same process as for a bottle of red wine. If chilled, discreetly write the table number on the back label and place the bottle in the nearest ice bucket OR bring the ice bucket to the table, and place it in the most central but least obtrusive location next to the table 10.If the guest does not make any indication that they’d like to keep the cork, remove the cork from the table OPENINGTHEBOTTLE – SPARKLINGWINE Tools needed: Serviette Napkin, Wine Bucket Throughout this process, the wine label should always be facing the guest. 1.Place your hand around the neck of bottle, just slightly above the bottom of the foil, by placing your thumb and pointer finger together and grasping the bottle 2.Using the pull tab on the foil, pull the strip around the bottle top in a clockwise direction until it has completely disconnected the top piece of foil, and remove the top piece of foil. Place any foil in your pocket 3.Using the hand by which you are holding the bottle, place your thumb on top of the cork and cage. Keep your thumb placed firmly in this position throughout the entire opening process 4.Using your free hand, pull down the circular metal piece of the cork cage. Turn it counter clockwise until it is completely un-twisted, which should be exactly 6 turns 5.Using the hand that is holding bottle and cork/cage, grip the entire cork and cage and begin to slowly twist the cork back and forth in a circular motion. For some tougher bottles, you can also twist the bottle back and forth in the opposite circular motion if need be. Continue this motion until the cork has been nudged completely out of the neck of the bottle. There should be no “popping” noise when the cork is fully removed (even if it’s a celebration!). 6.You do not need to present the cork from the bottle, so it can be placed in your pocket for disposal at a later time 7.Pour the guest an one ounce taste of wine from the bottle, using a serviette napkin to wipe any excess wine from the lip of the bottle 8.Upon approval, pour approx. inately 3 ounces of wine for each of the remaining guests in the following order, ideally in a clockwise direction around the table (you may need to pour 1-2 ounces per guest, and then re-pour the final 1-2 ounces per guest once the bubbles have subsided): »Women »Men »Guest who ordered the bottle of wine (regardless of age or whether they are a man or woman, the guest who ordered the bottle should always be served last)
