FOR WATER

For reservations, fill water glasses 5 minutes prior to reservation time If ice/tap water is ordered, serve water by bringing a full pitcher to the table and pouring the water directly into the water glass. Lift glass up and away from the table If bottled water is ordered, pick-up the bottle of water from the necessary location, remove the caps, and serve the water by bringing the bottle to the table and pouring the water directly into the water glass

FOR ALL OTHER BEVERAGES Pick-up the drinks from all necessary locations Confirm all drinks and elements have been produced exactly as ordered, and exactly as the guest specified Place all beverages on an appropriately sized service tray Serve the drinks to guests, briefly announcing/ explaining each drink as it’s presented Serve drinks from the right, ladies fist

Once the drinks have been ordered, you’re on the clock! Serving the guests the correct drinks at the correct temperature (cold drinks cold but not diluted, hot drinks hot) is a priority, so organize your time accordingly. This is a critical indicator of the pace of the meal, and the satisfaction of a guest. If a guest waits over 5 minutes for a drink, they are most likely already upset, and will be skeptical about whether you will be able they’ve ordered in a timely manner.
