RE-FIREFOOD
WHAT ISA RE-FIRE? A re-fire food is any food items that comes back to the kitchen for any reason. Some examples: Not cooked enough Overcooked Not hot enough Didn’t like the taste Didn’t like the way it looked • Not what they were expecting They changed theirmind
RE-FIRE TICKET
Once a food item comes back to the kitchen, you immediately need to fill out the entire re-fire ticket and give it to the Chef. You must also notify your Manager of the re-fire.
DELIVERING RE- FIRE’S
A manager must deliver all re-fire items to the table. If a Manager isn’t available, they need to check on the table as soon as possible after the re-fire item has been delivered.
RE-FIRE, RE-MARK
Anytime you have a re-fire, you must remark the Member with the correct silverware.
