HOW TO PREPARE A TABLE FOR FOOD SERVICE

BREAD BASKETS Butter or olive oil, B&B plates and B&B knives must be delivered (if not already pre-set on table). SOUPS Every time soup or chili is delivered to the table, a soup spoon must be delivered prior to the delivery of the food item. Soup or chili also must receive one packet of saltines and one packet of oyster crackers, unless the request from the Member/guest differs from the standard. SALADS If the salad on the menu does not have a specific dressing, this means the Member/guest has a choice. It is your responsibility to ask them what type of salad dressing they’d like. Don’t just ask them, “what kind of dressing?” Provide the salad dressing options. When the salad on the menu does come composed with a specific salad dressing, always remind the Member/guest that the salad they ordered comes with the salad dressing type, this way they can choose to keep or change the salad dressing. Always ask the Member/guest if they would like their dressing on the side (dos)? SANDWICHES Always ask the Member/guest what type of bread they want. Don’t just ask them, “what kind of bread?” Provide the bread options. (This only applies to sandwiches that have Choice of Bread on the menu). When a Member/guest selects their preferred bread type, ensure you ask if they would like the bread toasted. Members/guests always get a choice of a side. Don’t just ask them, “what kind of side?” Provide the side options. If the sandwich is Market Fish Sandwich, in addition to the side a lemon half and tartar sauce, must also be delivered (on the plate) FISH Fish dishes must always receive a lemon half (some restaurants may vary based on the menu selections, check menu and check with Chef for more information). Market Fish always receives a lemon half OYSTERS, CLAMS &MUSSELS When the food item gets delivered, a cocktail fork, lemon, proper sauces and an empty bowl for shells must be delivered at the same time BURGERS, STEAK, SALMON, TUNA, LAMB CHOP, PORK CHOP & DUCK You must ask how the Member/guest would like the food item prepared (e.g. the temperature). STEAK, LAMB CHOP & PORK CHOP (and other large proteins) Prior to the delivery of food, a steak knife must be delivered to the table.
